Sweet & Sour Chicken

This receipe has become a staple. Oh man, it is wonderful delicious and worth the time it takes to get the chicken bits breaded and ready for the oven. If you love sweet & sour things...this one is top of the charts, really! And I think it's decently healthy too, for as much as it can be with it being fried a bit. When we had this the other night it was seriously the best thing we had eaten in a while, or maybe it was just because we had gone to the gym and waited for it to cook forever!? Either way, it's worth the 20 minute prep time and hour bake...really. You could cut it down to 45 minutes, but after the deliciousness that it was the other night at an hour...just do that. Really, try it!!! You'll LOVE it!!!

*Serves 4-6



Chicken:
3-4 boneless, skinless chicken breasts
1 cup cornstarch
2 eggs, beaten
1/4 cup exra virgin olive oil
Cut boneless chicken breasts into chunks. Dip chicken in cornstarch and then in egg. Fry in a little oil until brown but not cooked through. Place in a single layer in a baking dish. Mix sauce ingredients (below) together and pour over chicken.
Sauce:
¾ cup sugar
4 tablespoons ketchup
½ cup vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt

Bake for one hour at 325 degrees. Turn chicken every 15 minutes so it is evenly coated with the sauce. Serve over rice.

I've been making Fried Rice to go with this and it is even better with that than regular rice. Cook rice like normal. Then in a large frying pan, spray some pam, heat up the pan. Crack 2 eggs and start cooking them like you would scrambled eggs. When they are almost cooked, add in the rice (about 1 1/2 C) and frozen veggies (I add corn, peas and carrots). Season as desired and serve with the chicken!
